Souped Up Tomato Soup

So my new thing is having soup every day for lunch. To make it easy on myself (since I'm fixing the kids different food), I decided to buy a bunch of ready-to-serve soups at Trader Joe's. Today I hit on a real winner. Here is how I turned packaged soup into a fine dining experience...

Ingredients:
16 oz Trader Joe's Organic Creamy Tomato Soup (half box)
1 oz X-tra X-tra Sharp New York Cheddar Cheese
1 t Garlic Olive Oil
fresh basil, torn into small pieces
freshly ground pepper

1. Pour soup into glass measuring cup. Microwave for two minutes.
2. While soup is heating, grate cheese (I weighed mine in a plastic bag on a food scale), and place in bottom of bowl.
3. Pour soup into bowl and stir in remaining ingredients.

Thus concludes my 350 calorie lunch, which I definitely plan to have again, maybe even tomorrow.

I love that soup:) I've never tried it with cheese, but somehow I know it would be good:D Soup is the best lunch ever and the best dinner too!
